In a bowl, combine chicken, soy sauce and honey. Set aside 5 mins to marinate. Drain chicken and reserve marinade. In a large wok or frying pan, heat oil on high. Add chicken and stir-fry 2-3 mins, until just cooked through. Remove from wok and set aside.

Add carrot, garlic, ginger, chili pepper and reserved marinade to wok and stir-fry 3-4 mins. Add 1/4 cup water, red pepper, celery and bok choy stems and cook 1-2 more mins. Return chicken to wok, along with noodles and bok choy leaves. Toss until well combined and heated through. Serve with extra chili pepper and cilantro leaves.
