Thaw the pastry while you prepare the rest of the ingredients.

Preheat oven to 400 degrees.

Heat the oil in a skillet and add the onions. Saute until onions are lightly browned.

Add in the carrots, turkey, potatoes and gravy. Saute a minute just to heat through (add a little water if the gravy is very thick, but don't make it too runny).

Taste and correct seasonings.

Put the mixture into a deep dish pie plate (or 4 individual ramekins).

Gently roll out the pastry dough just enough to fit the pie plate (it can remain rectangular or square shaped) Or cut it in 4 pieces if you are using 4 individual ramekins. Place it on top of the mixture in the pie plate.

Bake on a cookie sheet (to catch the drippings) about 30 minutes until the pie crust is browned.
