Rock Cakes

   Preheat oven to 200u00b0C or 400u00b0F.

   Sift the self raising flour into a bowl and then rub in the butter finely so it resembles fine crumbs. Add sugar, mixed fruit, beaten egg, and milk, starting with half the milk and then adding more as needed. It should mix into a stiff batter; if it is not coming together, add more milk 1 teaspoon at a time until you get the desired consistency (it won't be a wet mixture).

   Place mixture into about 10 mounds onto a lined baking sheet. If desired, sprinkle more sugar on top before baking.

   Bake for 15-20 minutes until golden brown.
