Chop the onion and bell pepper finely, or use a food processor and pulse until minced

Add remaining ingredients except for 1/4 cup of the ketchup or BBQ sauce, which will be reserved for topping.

Form into 12 equal sized balls and put in a greased muffin tin.

Bake for 15 minutes, then top each with remaining sauce and bake for an additional 5 minutes or until done (split one open to check it is cooked thoroughly)
