Ingredients: cooking spray; 1 teaspoon canola oil; 1 large onion, chopped; 2 medium garlic cloves, minced; 2 cups baby carrots; 1 lb lean ground turkey; 2 tablespoons chili powder; 1 tablespoon paprika; 1 teaspoon ground cumin; 2 medium tomatoes, chopped; 1 cup canned tomato sauce; 1 vegetable bouillon cube; 1 cup water; 1 ½ cups kidney beans, rinsed and drained; 1 medium green pepper, chopped; ½ teaspoon table salt (to taste); ⅛ teaspoon black pepper (to taste); ¼ cup scallion, chopped for garnish

Saute until soft.

Add chili powder, paprika, cumin, tomatoes, tomato sauce, bouillion, water, beans and green pepper; bring to a boil.

Cover, reduce heat and simmer for 30 to 45 minutes.

Season with salt and pepper,and garnish with scallions.
