Remove bones from turkey breast and reserve. Slice breast vertically, making 1/2 inch slices. Prepare stuffing using either packaged or your own recipe.

Layer stuffing between each slice of turkey, leaving a slice of turkey at each end. Wrap stuffed turkey in cheese cloth and tie at ends with string.

Brown turkey in hot oil and set aside. Cook carrots, celery, onions, and turkey bones in either oil or 1 1/2 cups water and 1/2 cup wine for about 10 to 15 minutes. Drain.

Place browned turkey (still in cheese cloth) into baking pan with onions, carrots, and celery. Add remaining 1/2 cup wine. Bake in 400 degree oven for 1 1/2 hours or until tender. Remove cheese cloth and serve. Serve 8 to 10 depending on the size of the slices.
