Tortilla-Crusted Chicken with Salsa

   Place chicken-breast halves between two sheets of plastic wrap; pound with rolling pin to 1/4-inch thickness.

   Place flour in flat dish.

   Place egg white and 1 Tbsp.

   water in shallow bowl; beat lightly.

   Place crushed tortilla chips in another bowl.

   Dip each chicken breast first into flour, patting off excess, then into egg-water mixture.

   Finish by coating with tortilla-chip crumbs.

   In a large nonstick skillet, warm egetable oil over high heat.

   Add chicken and brown each side, turning after about 3 minutes.

    Reduce heat to medium-low; continue to cook chicken until firm, about 5 more minutes on each side.

    Spoon prepared salsa over chicken; serve.
