After washing the yellow peppers, open them up and remove seeds and veins without removing the tops and stems.

Stuff the center of the pepper with 1 or 2 shrimps (peeled and without tail), some cream cheese and a slice of cheese, then wrap the pepper in bacon.

(You can use a toothpick to keep the bacon in place)

Place the peppers in a baking dish and pop them in the oven at 350 degrees F for about 20-40 minutes or until bacon is done.

For the dipping sauce.....

Just mix the soy sauce and the lemon juice and add chopped scallions!

*I made 12 of these but really you can make less ... Also, these yellow jalapenos are not as hot as regular green jalapenos so dont worry about these being too hot
