-
1
Preheat oven to 350F.
-
2
Take the tomatoes and slice em up.
-
3
Lay the slices on a baking tray and lightly salt.
-
4
Now, mix together 4 Tablespoons of sour cream, 1 Tablespoon of minced garlic, a couple handfuls of cheese, and the basil.
-
5
I used fresh basil from my mother-in-laws garden.
-
6
You can use a chopper, or you can look really cool and use a butcher knife.
-
7
Even if you have no clue how to chop stuff with one, thats OK.
-
8
There is only one rule when it comes to using this knife, do not chop off any fingers.
-
9
Follow this rule, and youll be fine.
-
10
When it comes to garlic, you can use fresh garlic bulbs or store bought minced garlic.
-
11
The store bought is easier to measure and use.
-
12
The great thing about this cheesy mixture is you can suit it to your tastes.
-
13
If you like a lot of sour cream, pile it on.
-
14
If you like a lot of cheese (like me) keep throwing it in by the fistful.
-
15
Mix all this stuff together in a bowl.
-
16
Now comes the fun part.
-
17
Get out that canister of biscuits and open that sucker up.
-
18
Take out a biscuit and tear it in half.
-
19
Do this to each biscuit.
-
20
Roll each half into a ball and flatten with your hands.
-
21
Then place it in the bottom of a muffin pan.
-
22
Reserve the other halves for later.
-
23
Now you will want to place the sliced tomatoes on top of the dough.
-
24
Next, add the cheese mixture.
-
25
OK, remember the other halves of the biscuits?
-
26
Place them on top and sprinkle with Parmesan.
-
27
By now, your oven should be preheated to 350 degrees F. Put these puppies* in the oven and let them cook for 15-20 minutes.
-
28
As long as you dont burn them, youll be OK.
-
29
*No puppies were harmed or used, and even though my dog gets on my nerves by barking, I would never throw her in the oven.
-
30
Now you are ready to serve!
-
31
Scoop em out onto a plate and serve with a fork or spoon.
-
32
Dont worry if they break apart when you serve them.
-
33
I must say that these are scrumptious.
-
34
They remind me of something a nice bistro in Charleston would serve.
-
35
Very southern and very good.
-
36
A great summer time treat.
-
37
You could serve them as an appetizer, or as the main course.
-
38
Try it out and tell me what you think.
