Tomato Conserva(Miscellaneous)

   Remove cores from the plum tomatoes and cut in half.

   Slice garlic thin and press into tomato halves.

   On an oven proof pan, coat the tomatoes with the olive oil, salt and pepper.

   Place in a 350 degree oven.

   Roast the tomatoes until they are slightly brown and soft.

   This will take approximately 15 - 20 minutes.

   In a stainless steel bowl, mix the remaining ingredients and stir.

   Add in tomatoes and mix with a fork to break up the tomatoes and infuse the flavor.

   This recipe can be used on grilled salmon, but can also be used for pork or chicken.
