Wash the tilapia fillets with water and add the lemon juice, set aside.

In a non-stick frying pan, set on medium high heat and add 1/2 teaspoon of coconut oil, sprinkle a dash of the brown sugar and let it brown. Once the sugar is dark brown, add the tilapia for 3 minutes and toss on the other side. In a separate pan, add 1/2 teaspoon of coconut oil, proceed by chopping onions, pealed mashed garlic, let us add mustard simmer on coconut oil, a small dash of kosher salt. when all the ingredients are cooking, stir constantly so they cook evenly, add 1/2 teaspoon of tomato paste and add 1/2 cup of water. Taste the salt content and simmer on medium low. Once the sauce is thick in consistency, pour over the already sauteed tilapia. Serve with your favorite vegetable or a side of wild rice. I served this last night with toasted mini pita bread with a Balsamic dressing and mixed greens. My husband just loved it!
