The Teddy . . . A Woodsy Hot Toddy

   Clean birch twigs under water then rough them up

   Place twigs in the water and bring to a boil.

   When the water boils reduce heat to medium-low and steep for about 10 minutes. The water will change color and turn to birch tea. Do not over boil as it will cause the tea to lose flavor and aromatics.

   Strain the tea into a tea or coffee cup.

   Add the calvados or other brandy.

   Add the lemon juice.

   Add the maple syrup stirring it to ensure it completely dissolves.

   Place the lemon slice into the mug/glass and serve warm.
