Finely chop onion, parsley (if fresh), and bacon (if used) put in large bowl Add rest of ingredients except cheese to large bowl Mix well Separate meat into 8 equal balls Cut each ball in half Flatten balls into patties with a little dent in the middle ( trust me, it helps cook the patty evenly) Break up slices of cheese and add to top of half the patties with about 1/2 inch boarder around them Add patty without cheese on top of cheese pinching the sides down then folding the edges back over to eliminate seams Pre heat BBQ to about 300 or turn on half the burners to high for about 10mins Cook patties 4 min a side on direct heat with the lid open!
