In a bowl add Rotel, soup, sour cream, cilantro, and 1 cup of cheese.
-
2
Mix well.
-
3
Slowly add in 1/2 can of the broth.
-
4
Check consistency.
-
5
It needs to be thicker than a pancake batter but not too thick.
-
6
Add more broth if it seems to thick.
-
7
I usually end up using the majority of the can.
-
8
I can always add more cheese if I get it too thin.
-
9
In a 12 x 10 or so casserole dish ladle about 1/2 cup of the soup mixture into the dish and spread it around.
-
10
Put one layer of tortillas on top of the sauce.
-
11
Next place cut up cooked chicken on top of the tortillas.
-
12
Dont use all of the chicken as we will repeat this layer again.
-
13
Ladle some of the soup mixture on top of the chicken.
-
14
Continue with this layering; tortillas, chicken, and sauce until all ingredients are used up.
-
15
You should end up with sauce on top.
-
16
Take the remainder of the cheese and dump on top of the casserole!
-
17
Bake uncovered at 350 degrees (F) for about 45 minutes or until it browns and bubbles.
-
18
Make sure the middle is hot too!
-
19
I serve this with a green salad, chips and salsa!
-
20
Guacamole and pico de gallo are excellent with this as well!
-
21
This serves 6-10 depending on the serving size.
-
22
