1
Let the yeast dissolve in the water in your stand mixer bowl.
-
2
Once it is dissolved, add salt and 2 cups of the flour and then turn on mixer with the dough hook and wait until well combined.
-
3
I add the olive oil while it is mixing.
-
4
Once it is combined but still sticking to the bottom, I add the next cup of flour a half cup at a time.
-
5
If it is still super sticky, I add more flour.
-
6
Once it is kneading, let it knead for about 2 minutes.
-
7
Put it in a greased bowl and let it sit for an hour.
-
8
(If you are in a hurry, turn the oven to low, then shut it off and leave the dough in there to help it rise faster.)
-
9
While that is rising, cook the meat.
-
10
(Sometimes I will warm the beans and add hot sauce to make it a little smoother to add on to the dough.)
-
11
Preheat oven to 450 degrees F.
-
12
When the dough is ready, sprinkle the cornmeal on a baking stone or pan.
-
13
Spread dough on, making it the as thick or as thin as you want.
-
14
Once its ready, top with the refried beans, then taco meat, then black olives, and finally the cheese.
-
15
Bake for about 15 minutes or until crust is golden brown and cheese is nice and cooked.
-
16
Once it has cooled, cut into pieces and add lettuce and Doritos as each piece is served, unless its eaten all in one serving (reheating will wilt the lettuce).
