Taco Casserole

   Cook vegetables according to package. In large skillet, brown ground beef and onions; drain off excess fat. Add taco seasoning, water and corn. Simmer 10 minutes. Remove from heat and stir in mixed vegetables. Sprinkle 1/3 corn chips over bottom of a 9 x 9 x 1 1/2-inch baking dish. Add half the meat mixture and top with half the enchilada sauce; sprinkle with half the cheese. Repeat layers, beginning with 1/3 corn chips and ending with cheese. Bake in 350u00b0 oven for 15 minutes.
