Remove shells and veins from shrimp.

Rinse.

In a saucepan, combine beer, Tabasco sauce, salt, mustard, vinegar, onion slices, sugar and thyme.

Bring to a boil and simmer about 1 minute.

Add only enough cleaned shrimp as will be covered by the liquid mixture.

Return to boiling and then simmer 2 to 5 minutes, depending on size.

Remove shrimp and repeat cooking procedure. Remove from liquid.

Cool both shrimp and liquid.

Return shrimp to cooled liquid and marinate for several hours.

Drain.

Serve with wooden picks as hors d'oeuvres or appetizer.
