Sweet & Savory Mashed Sweet Potatoes #SP5

   Preheat the oven to 350.

   Prepare mashed sweet potatoes per package instructions.

   Set aside.

   Make a pesto using basil, olive oil (or oil of choice), and pine nuts (or a nut of choice).

   Alternately, use prepared pesto from the store.

   Cook bacon in a pan 6-7 minutes per side.

   Let it cool, then chop into bits.

   Combine the pesto, bacon, maple syrup and salt and pepper to the mashed sweet potatoes, and place in a baking dish.

   Bake the potatoes for 20 minutes, or until heated through.
