Sweet Potato Souffle

   1. Peel and cook the sweet potatoes. Drain well on paper towel. Mash and add beaten eggs and 1/4 cup melted butter, salt and cinnamon.

   2. Beat in orange juice until potatoes are soft and fluffy (not all the orange juice).

   3. Transfer to baking dish, cover with pecan halves, brown sugar and the rest of the butter.

   4. Bake at 350 degrees for 25 minutes. Serve.
