Sweet Potato Hash (With An Egg!)

["Fill pot of water and bring to boil.", "Chop sweet potato into 1 inch cubes (I like skin on - has nutrients!)", "Boil sweet potato cubes for 5 minutes to soften a bit. Then drain and set aside.", "While potatoes are boiling, chop your onion and red pepper.", "Add olive oil to skillet and heat over medium/high flame.
