Combine 12 cups onion and salt in a large bowl.

Let stand 30 minutes. Drain squeezing all excess juice from mixture.

Place pickling spice on a 6-inch square of cheesecloth.

Tie with string. Combine onion, spice bag, sugar and remaining ingredients in a large Dutch oven.

Bring to a boil; reduce heat and cook about 30 minutes or until mixture is thick.

Remove and discard spice bag. Pack onion mixture into hot jars, filling to 1/2-inch from top. Remove air bubbles.

Wipe jar rims.

Cover at once with metal lids and screw on hands.
