Sweet Garlic Soup

   Start cooking about 35 min before serving.

   Trim off the crusts from the bread slices & set aside.

   Separate and peel garlic cloves.

   Half-fill a large sauce pan with water, add garlic and bring to a boil.

   Pour off water.

   Refill pan with water and return to a boil.

   Pour off the water.

   Add chicken stock to pan and simmer over low heat until the garlic begins to soften, about 7-8 minute

   Note: Cooking may be stopped here when preparing in advance.

    When ready to finish, return stock and garlic to a simmer.

    Add bread slices and bring to a boil.

    Stir in the creme fraiche and return to a boil.

    Pour soup into a food processor or blender, add butter, season with salt and pepper and process until smooth.

    Pour into individual soup bowls and add a fresh egg yolk to each just before serving.
