Add in the the sifted cake flour and baking soda at the same time, and lightly mix to get rid of the flouriness.

Wrap in plastic wrap and flatten it out evenly, and let sit in the fridge for an hour.

After an hour, preheat the oven to 180C.

Spread out the cookies thinly onto the cookie pan with spaces in-between.

They won't spread out too much in the oven if you shape them out thinly.

Bake the cookies in 2-3 batches according to the size of the oven.

They will bake in 12-14 minutes.
