Line 2 cookie sheets with parchment paper or grease them lightly with butter or vegetable oil.
-
3
Sift the flour, soda and salt into a small bowl; set aside.
-
4
Using an electric mixer on medium speed, cream the butter, brown sugar, 1/4 cup granulated sugar, peanut butter and vanilla in a medium size mixing bowl until light and fluffy, 2 to 3 minutes.
-
5
Stop the mixer twice to scrape the bowl with a spatula.
-
6
Add the egg.
-
7
Blend on medium speed until it is almost incorporated, about 10 seconds. Scrape the bowl.
-
8
Add the dry ingredients on low speed and blend 15 seconds.
-
9
Stop the mixer to scrape the bowl and beaters, then blend until the dough is smooth, about 5 seconds more.
-
10
Measure out 48 rounded teaspoonfuls of the dough and roll them into balls using your hands.
-
11
Dip one side of each ball in the remaining 1/2 cup granulated sugar.

12
Place them 2 inches apart, sugar side up, on the prepared cookie sheets.
-
13
Bake until cookies are light gold, 8 to 10 minutes.
-
14
Remove cookie sheets from the oven.
-
15
Immediately top each cookie with a kiss, flat side down, pressing kiss firmly into the center of the cookie to imbed the kiss.
-
16
Carefully remove the cookies from the sheets and place them on a plate or cooling rack. Makes 48 cookies.
