Sun and Clouds

   Preheat oven to 350F.

   Put egg whites in a bowl and whip with a hand mixer or stand mixer until very stiff.

   Put the toast on a sheet tray or cookie sheet and put one slice of ham or bacon on each as well as tomato and cheese.

   Mound 1/4 of the whipped egg whites on top of each slice of toast.

   With the back of a tablespoon make a cup in each mound of egg whites to hold one egg yolk.

   Carefully place 1 egg yolk in the cup made with the spoon into the mounded whites.

   Place in oven and bake for 12-15 minutes.
