Summer Sizzling Drunken Lamb

   Clean lamb chops and drain all water and fluid.

   Marinate lamb chops with garlic, onion, scallion, soy sauce, sugar, and brandy for over 24 hours in a refrigerator in a air-tight container.

   Lit a charcoal grill and wait till the grill in on high heat.

   While waiting for the grill to be ready, remove the lamb chops from the refrigerator, and then remove the chops from the marinated juices and place them in a separate bowl. Save the juice for later use.

   Inside the bowl, add olive oil to the both sides of the lamb chops.

   Place lamb chops on grill and sear both sides for no more than one minute for each side.

   Reduce the heat level of the grill (by racing the rack or adjusting the air flow)

   Continue to grill the lamb chops for another 10 minutes till medium well.

   Baste lamb chops with the marinated juices during these 10 minutes.
