Preheat oven to 350u00b0F. Spray a 15- to 17-inch pizza pan or 15x11 rectangular dish with baking spray.

Spread sugar cookie dough evenly, leaving 1 inch along the edges of the pan from so the cookie dough doesn't overflow into your oven when it bakes. (That happened to me. I would place aluminum foil on the rack where the pizza will be baked in case it overflows.) Bake for 10 minutes. The cookie dough will be slightly browned. Allow to cool completely.

Using a handheld mixer or standing mixer, whip cream cheese until creamy. Slowly add powdered sugar and vanilla extract until well-mixed and smooth. Spread across sugar cookie crust. Begin to layer and spread fruit across the crust as desired.
