Cut the zucchini in half length wise.

Coat the center with a little oil and salt/pepper.

Stick this is the oven at 450F for about 5 minutes.

While that is in the oven begin browning the sasuage.

Remove the zucchini from the oven and scoop out the center.

You can either add this to the sasuage if its not to seedy or trash it.

Add to the sasuage mixture the green and red peppers, green chilis, rice and water.

Cook for 5 minutes.

Remove from heat and stir in the shredded cheese.

Using the sasuage mixture fill the center of the zucchini and top with the pepper jack cheese

Place the filled zucchini in foil and make a foil tent so that the cheese does not get stuck.

Place on a baking sheet and cook at 350 for 30-35 minutes.
