Preheat oven to 450 degrees.

Wash mint and separate leaves from stems. Finely chop enough mint leaves for 1 tsp. and place in a small mixing bowl.

Add egg and water to mint; whisk together.

Add raisins and stuffing mix to egg; mix well.

Butterfly pork chops for stuffing. (To butterfly, lay pork chops flat. Slice horizontally through center of pork chops to form a pocket, leaving 1/2 inch uncut to hold top and bottom slices together.) Salt and pepper pork chops to taste.

Place pork chops in baking dish with butterfly open. Stuff each pork chop with stuffing mixture. Fold top half of pork chop over stuffing to close. Add remaining stuffing to center of dish.

Pour gravy over pork chops, place in oven, and bake 20-30 minutes or until internal stuffing temperature is 165 degrees. Serve with mashed potatoes.
