slice chicken breasts in middle and set aside

In a bowl, mix mushroom, garlic, spinach, green and black olives, 1/4 cup olive oil, salt and pepper set aside

In a large skillet at high heat, poor 3/4 cup olive oil and add chopped onion, stir constantly for 20 minutes

After 20 minutes poor bottle of ale into skillet and stir frequently until carmalization, after carmalization take out onions and place in a bowl and set aside

take olive mixture and stuff into chicken breasts and place chicken breasts into large skillet, poor 1/2 cup of white wine and rest of olive oil, cook for 15 minutes or until golden brown

after chicken is golden brown place chicken breasts on a plate and top with carmalized onions and serve
