Squeeze the gelatin with your hands to drain and melt with tablespoon of strawberry puree and the sugar in a saucepan over low heat. Cool and add to remaining strawberry puree.

Whisk the very cold cream using an electric mixer until stiff.

Mix 1/4 of the whipped cream with strawberry puree, then add the rest with a spatula, mixing gently.

Pour into individual cups and cool for at least 3 hours.
