Mix all-purpose flour, polenta, salt and sugar in a bowl. Separately stir fresh yeast with milk and water and then pour it over the flour mixture. Add the remaining ingredients and knead the dough with your kitchen machine. With two minutes on the lowest speed, and then 10 minutes on the second speed, the dough should be smooth and flexible. Cover the bowl with cling film and place it in the fridge for the night.

On the next day, knead the dough and divide it into four equal pieces: make them 'round' and put them into a round baking pan. Cover this with cling film again and then let the dough rest for 30 minutes.

Peel an onion and cut it into rings. Prepare three bowls or deep dishes. In the first one, mix flour, salt, pepper and chili. In the second one, mix egg with butter milk. In the third, add breadcrumbs. Once prepared, dip the onion rings into the flour and remove excess flour before dipping them afterwards in the egg mixture. Remove excess liquid and then, lastly, cover the onion rings with breadcrumbs. After finishing all of the onion rings, put them on a baking tray, which should be covered with a baking sheet, and spread some olive oil over them. Bake for 12-15 minutes.
