In a hot greased pan cook the bell peppers and onions until they are browned.Add the chicken and cook thoroughly, and slice into strips.Add the spices, hot sauce, chicken broth, S&P, and the shrimp. Mix well.Cook over medium high heat until the shrimp are done. Taste to test seasonings level, add more if necessary. In a separate pan, spray nonstick cooking spray and put on medium heat. Place one quesadilla in the pan, add a handfull of each kind of cheese, add the meat and spices mixture, top with more cheese, and finish with another tortilla.
