Spicy Sausage Frittata

   Heat oil in a large frypan over medium heat.

   Add the onion and cook until soft.

   Remove onion.

   Fry the sausages in the pan until browned and cooked through.

   Add onions back to pan and fit the cubes of Philly* between the gaps in the sausages.

   Whisk the eggs, parmesan cheese and parsley until combined.

   Pour over sausages and Philly* into pan.

   Reduce heat to low, cover and let the frittata cook until set right through.

   Serve with salsa.
