Spicy Pepper Quesadillas

   Heat oven to 375F.

   Cook and stir vegetables and cumin in large nonstick skillet on medium-high heat 4 min.

   or until vegetables are crisp-tender; drain.

   Spray tortillas with cooking spray.

   Place 5 tortillas, sprayed sides down, in single layer on baking sheet; top with vegetable mixture and cheese.

   Cover with remaining tortillas, sprayed sides up.

   Bake 4 to 5 min.

   on each side or until quesadillas are lightly browned on both sides and cheese is melted.

   Cut in half.

    Serve with salsa and sour cream.
