Spicy Mexican Nut Mix

   Preheat oven to 325u00b0. In small bowl, toss together shredded wheat and nuts; set aside. In small bowl, place the egg whites, honey, chili powder, thyme, salt and cayenne; stir vigorously with a fork until completely blended. Pour over the nut mixture and toss continuously for about 2 minutes, to distribute the flavors and coat the cereal and nuts evenly. Transfer the mixture to a baking pan and bake for about 20 minutes, stirring once or twice, until the mixture has browned lightly. Cool to room temperature. Store in airtight container. Makes about 4 quarts.
