Spicy Lime Roasted Pork Loin

   Heat the marinade, soy sauce and wine in the microwave. Do not let the mixture boil.

   Stir in the jelly until it liquifies.

   Sprinkle the inside of the pork loin with salt, pepper and garlic.

   Spread marinade on both interior sides of the pork.

   Place pork and 1/2 of the marinade in a ziplock bag and place in refrigerator for 30 minutes.

   Fold roast together and sear on all sides on a hot grill for 3 to 4 minutes until outside is gently browned.

   Prepare a double layer of heavy duty aluminum foil to wrap the roast by spraying cooking spray on all interior sufaces.

   Place roast and marinade in foil, Wrap tightly and grill on medium heat for 10 to 15 minutes until pork cooked through, but still barely pink.

   Place remaining marinade in small saucepan and simmer until thickened.

    Thinly slice the pork and arrange on seving platter. Garnish with lime slices. Drizzle with thickened marinade/sauce.

    Serve with remaining sauce.

    (If grilling is not convenient, the roast may be baked at 375 degrees for 20 to 30 minutes in a foil covered baking dish. Baste occasionally with marinade.
