In a large heavy-bottomed pot, combine sugar, corn syrup, butter, cayenne (optional) and salt. Heat over medium heat, stirring occasionally until sugar dissolves.

Insert a candy thermometer and heat until thermometer reaches 300u00b0F. Do not stir during this time.

When candy thermometer reaches 300u00b0F, remove from heat and sprinkle baking soda over mixture. Stir will to incorporate. (Mixture will bubble and foam.) Stir in nuts.

Immediately pour onto the baking sheet and spread evenly. (You can use a metal knife sprayed with a little cooking spray, or a silicone spatula.) Let cool completely and break into pieces.
