Heat the oven to 200 degrees C (400 degrees F).

Place paper liners in muffin tin.

Measure dry ingredients into a large mixing bowl and mix together until well blended. (or you can sieve the flour and baking soda but who can be bothered for muffins!)

Measure wet ingredients into a jug and mix up well with a fork.

Make a well in the dry ingredients and add wet ingredients and banana. Stir roughly until just combined. (The batter will still look lumpy. If you're not sure how much to mix, stop before you think it's ready.)

Pour batter into muffin tin until nearly full.

Bake for about 20 minutes or until a skewer comes out clean.

Cool until you can handle them and then enjoy. Personally I like these with lots of butter and honey, but they're pretty good plain too.
