Ingredients: 500 g caster sugar; 250 ml corn oil; 3 eggs; 5 tablespoons milk; 1 teaspoon salt; 1 teaspoon vanilla extract; 500 g courgettes, grated; 750 g self raising flour; ½ teaspoon bicarbonate of soda; 1 teaspoon ground ginger; ½ teaspoon ground cloves; 200 g pecan nuts, chopped; 140 g raisins

Heat the oven to 160c/gas3.

grease 2x1lb loaf tins & line the base of each with baing parchment.In a large bowl , mix the sugar oil & eggs, milk & vanilla, then the courgettes.

Fold in the dry ingredients, followed by the nuts & raisins.

Spoon the mix into the tins, level the tops.

Bake for 1 hour 30 minutes until golden & well risen with a crisp crust.Leave to cool slightly.Turning out on a wire rack to cool.

Serve warm & eat within 2 days.
