Ingredients: 900 g skinless chicken thighs and/or drumsticks; 1 onion, minced; 1 large carrot, cut in bite-sized pieces; 1 large potato, cubed; 2 large tomatoes, chopped; 4 cloves garlic, minced; 2 zucchini, sliced; 2 Tbsp tomato paste; 2 handfuls coriander leaves, chopped; 2 Tbsp cooking oil; 1 Tbsp ground coriander; 2 tsp ground cumin; 1/2 tsp turmeric powder; 1/4 tsp ground cardamom; 1/4 tsp cinnamon; to taste salt

1 onion, minced
1 large carrot, cut in bite-sized pieces
1 large potato, cubed
2 large tomatoes, chopped
4 cloves garlic, minced
2 zucchini, sliced
2 Tbsp tomato paste
2 handfuls coriander leaves, chopped
2 Tbsp cooking oil
1 Tbsp ground coriander
2 tsp ground cumin
1/2 tsp turmeric powder
1/4 tsp ground cardamom
1/4 tsp cinnamon
to taste salt

Heat oil in a large pot.

Saute the onion until it starts to brown a little.

Add the chicken and cook each piece so it's browned on both sides.

Add potatoes and carrots.

Cook for a few minutes while stirring.

Add the tomatoes and cook for another few minutes while stirring.

Cover the pot and continue to cook on medium for 5-6 minutes, stirring occasionally.

Add in the garlic and all the spices.

Mix well with other ingredients.

Add the zucchini, tomato paste, and a little salt and mix in.

Pour in enough water to just cover everything.

Bring to a boil, turn to low and let simmer for 45-50 minutes until every thing is well cooked and the stew has thickened.

Just before serving, stir in the chopped coriander.
