Preheat oven to 350u00b0F. Grease and flour cake pan, then place a piece of parchment paper in base.

Beat butter and 1/3 cup sugar in a bowl with an electric mixer until light and fluffy. Add lemon zest, then beat in eggs one at a time, beating well after each addition.

Sift flours, 1 tsp cinnamon, ginger and nutmeg into egg mixture. Pour in milk and stir with a wooden spoon to combine. Pour mixture into prepared pan.

Peel apples and cut into halves. Remove cores. With a paring knife, cut thin slits into apples. Arrange apples over top of cake. Combine 2 tsp sugar and 1/2 tsp cinnamon and sprinkle over cake.

Bake for 40 mins or until a skewer inserted into center of cake (not apples) comes out clean. Remove cake from oven and brush with warmed jam. Allow to cool in pan for 10 mins, then turn onto a wire rack to cool completely. Serve warm or at room temperature.
