Spice-Crusted Skirt Steak

   Grind all spices (if using whole spices) in a spice grinder.

   Place steak, spices, and 1/2 tablespoon of oil in a zipper bag and rub to coat steak liberally.

   Place in refrigerator for 8 hours.

   Preheat oven to 350F.

   In a medium skillet over medium-high heat, add 1 tablespoon of oil.

   Add steak and sear for 3-5 minutes on each side or until darkened crust forms.

   When steak is seared, place skillet with steak (if using an oven-safe skillet) in 350F oven for 15-20 minutes or until desired doneness is reached.

   Is best served at medium doneness.

   Remove from oven and allow to rest for 10 minutes before slicing against the grain.
