South County Johnny Cake

   Mix corn meal, salt, sugar, boiling water and a lump of butter, thinning down with rich milk, all the while stirring over low heat, 10 to 15 minutes to cook through.

   Cream or milk is added from time to time until mixture is like mashed potatoes. Drop by tablespoon on hot greased griddle.

   Cook until brown and turn over and brown the other side.

   Serve piping hot with butter.
