Soupe a L'oignon Gratinee/ Onion Soup "au Gra

   Pre-heat oven on grill position; grate the cheese.

   Melt butter & oil in a large thick saucepan, medium flame, and brown the onions for about 5 minutes.

   When they are softer, sprinkle the flour on them and stir until blended.

   Let it on fire for 5 more minutes then pour the wine and the warm water (around 1 liter / 2 pints).

   Add salt & pepper and simmer for 15 to 20 minutes reducing flame.

   Pour the soup evenly in the soup tureens and float the toasts in each.

   Top with the grated cheese.

   Let it melt and brown in the oven for a few minutes and serve right away.
