Smoky Cheddar Soup

   In a large pot, melt the butter over medium heat. Add celery and ham, saute about 10 minutes, or until celery is softened. Add flour, cook for 1 minute while stirring. Add chicken broth and tomatoes, cook for 10 more minutes.

   Stir in milk, cream, cheese, and spices. Heat while stirring over medium heat until smooth and warm, but don't bring to a boil.

   Add parsley and add more salt and pepper if needed. Serve warm.
