Place the corn beef on the grill (fat side up) over the drip pan and add wet hickory wood chucks directly to the hot coals.

Smoke for about 1 hour at about 300F.

After 1 hour place the corn beef into a drip pan and add the bracing liquid ingredients.

Cook for an additional 3 hours or more.

Flipping every 30 minutes.
