1. Saute the chicken, sundried tomatoes packed in oil, and onion in a nonstick skillet over medium heat until chicken is done. Cover with lid while cooking.

2. In the meantime, melt the butter in a 2 quart pot over medium heat. Add the 2 cups of half and half and cook over medium heat until it slightly thickens.

3. Add 1 cup of the grated smoked gouda cheese to the half and half-butter sauce. Stir until melted.

4. Then drain off any excess oil from the cooked chicken,onions, and sun-dried tomatoes and add them to the sauce. Stir well.

5. Add all of the above to the 1 lb of penne pasta cooked according to the package instructions.

6. Garnish with the remaining 1/2 cup grated smoked gouda cheese.

7. Let the pasta rest for 5 to 10 minutes before serving.
