Preheat oven to 350 degrees F.

Add just enough olive oil to coat bottom of saute pan.

Season chicken with salt, pepper, paprika and Emeril seasoning.

Cook chicken over medium heat until browned on both sides, about 10 minutes.

While the chicken is simmering, heat oil in a saute pan and add the potatoes.

Cook over medium heat until lightly browned, about 10 minutes.

When the potatoes are done, remove them and quickly saute the onions until translucent, about 5 minutes.

Blanch the broccolini until crisp/tender, about 4 minutes.
