1 whole Bell Pepper, Chunked
2 Tablespoons Butter
1 pound Sausage, Sliced
4 whole Zucchini Or Squash, Sliced
48 ounces, fluid V8 Juice
Garlic, To Taste
Oregano, to taste
Salt, To Taste (optional)
1 cup White Or Brown Rice, Uncooked

Cut onion and bell pepper into small chunks and saute in butter for 3-5 minutes.

Add in sliced sausage and zucchini, saute another 3-5 minutes.

Pour in V8 Juice and season with garlic and oregano (I also like to add a bit of salt).

Pour in uncooked rice, stir all together, then cover and simmer for 20-30 minutes.
